800g light fruit cake
100g dark chocolate
25g butter (melted)
A splash of your favourite holiday spirit (rum, brandy or Cointreau)
200g white chocolate, green & red glace cherries or soft lollies for decorating
Crumble the cake into a large bowl until fine crumbs form. Add a couple of tablespoons of your liquor of choice and mix with the cake crumbs.
Using a heatproof bowl over a saucepan half filled with water, melt the dark chocolate and butter stirring occasionally.
Add the melted chocolate to the cake crumbs and mix well. This should form a thick but wet dough.
Line a tray with greaseproof paper. Using your hands, roll the mix into small balls and place onto the prepared tray and refrigerate.
Melt the white chocolate and chop the cherries (or lollies).
Spoon the melted chocolate over the chilled truffles and top with your chopped green and red decorations of choice. Refrigerate until serving.
